Pondicherry Express Hot Kitchen

We’re located at number 6 on the ECR Main Road in Lawspet. It’s a good spot because the ECR is such a major road, and we’re close to Datamatics, so we get a lot of office folks coming in during their breaks. The "hot kitchen" part of our name is pretty literal—it stays very warm in there once we get the stoves going in the morning. We start early, usually when the air is still a bit cool before the Pondicherry sun really hits the pavement. There’s a lot of prep involved every day, like chopping piles of onions, grinding spices, and getting all the heavy pans ready. We don’t have a lot of frills or fancy decorations here. The main focus is just on the cooking and getting orders out. Sometimes the salt air from being near the coast makes things rust a bit faster than usual, so we’re always scrubbing and maintaining our equipment. Lawspet is a nice neighborhood, a good mix of houses and businesses, so we see a wide range of people throughout the week. You’ll hear the motorbikes zooming past on the main road while you sit inside. We’ve had the same crew working here for a while now, and we’ve all got our own way of doing things. It’s not a fancy corporate setup, just a bunch of us working in a kitchen making sure the food is ready when people are hungry. We just try to keep things honest and stay on top of the daily chores that come with running a food place.
