Madame Shanthes Multicuisine French Restaurant

We have been on Romain Rolland Street for quite a while now. You know how White Town gets during the weekends, crowded with folks from out of town looking for a place to sit. Our spot here at No 40 A is just an old building we’ve kept going. It’s got that French look everyone expects in Pondicherry, but inside, it is just a regular kitchen where the staff works hard. Sometimes the fans do not keep up with the heat, but that is just how it is by the beach. We do a mix of things, not just one type of food, because people have different tastes. Some want the French stuff they heard about, others just want something familiar. The morning starts early with getting the vegetables in and checking what needs fixing. We are not a big chain or anything. It is mostly just us trying to keep the tables clean and the plates moving. People come in from the beach road with sand on their shoes, and we just sweep it up. It gets noisy when the lunch rush hits, and we might run out of a particular dish if the market did not have the right ingredients that day. We do not have a fancy website or a big marketing plan. We just open the doors and see who comes in. It is a lot of work, but being in this part of town is interesting because you meet all sorts of people walking past.
