Up here in Leh, things work a little differently. We are part of the resort on Fort Road. The air is thin and the winters are long, so we have to make the most of the months when it is actually warm. Our restaurant looks out towards the mountains and you can see the fort if the sky is clear. We get a lot of travelers who are a bit tired from the altitude, so they just want to sit down and have something hot. The furniture is mostly wood and we have some local rugs on the floor to keep the chill away. The kitchen is busy from early morning until late at night. We source what we can from the local markets in Leh Ho, though sometimes getting supplies up the mountain road is a challenge if the passes are blocked. My cousin does most of the cooking and he has his own way of doing things. We don't have a big menu because we prefer to just make what we know how to do well. The 194101 area is quite famous now with all the tourists, but for us, it is just where we live. We spend our evenings cleaning up and preparing for the next day's arrivals. It is a quiet kind of work most of the time. You can hear the wind whistling through the windows when it gets late. We usually drink a lot of tea while we wait for the dinner rush.
