We operate out of 139, Block B in Lake Town. It’s not really a place where people come to sit down and eat, as we spend most of our time packing things up and sending them out for different events. Lake Town is a nice area but the traffic in the narrow lanes of Block B can be a real headache when we are trying to load the delivery vans. We’ve got these massive stainless steel vats and long wooden paddles for stirring the big batches of food. The kitchen smells like spices and steam from five in the morning until late at night. My brother handles the phone calls and the bookings while I stay in the back making sure the burners are going. We don't have a glossy office or anything, just a desk tucked in the corner with a lot of old notebooks where we write down the orders. Sometimes the flour gets everywhere and the floor gets a bit slippery, so we have to be careful with our footing. It’s a family thing, really, with my nephews helping out when they aren’t in school. We don't do any big advertising; people just find us by word of mouth or by seeing our vans parked on the street. It’s hard work, especially when there are multiple orders on the same day, but we just take it one step at a time. We’ve been in this spot for years and know all the neighbors.
