Down at 152 Harish Mukherjee Road in Bhowanipur, things stay pretty busy. Kolkata has a way of always being on the move, and this street is no different. Our place, New Appayan, has been part of this neighborhood for a while. It’s not a big fancy setup. We have our tables and chairs, and the kitchen is right where it needs to be. Every morning, we walk in and start the routine of getting the rice and vegetables ready. Bhowanipur is a place with a lot of history, and you can feel that when you walk around. We get all sorts of people coming through the door. Some are students, some work in the nearby offices, and some have lived on this road their whole lives. We don't really have a secret to what we do. It’s just about being here every day and making sure the food is ready when people get hungry. The walls could probably use a fresh coat of paint eventually, and the traffic outside never really stops, but it feels like home to us. We try to keep things simple. If someone wants a meal, we give it to them. There’s no need to overcomplicate things. We just stay focused on the pots and pans and the people sitting at the tables. It’s a quiet kind of life, even with the city noise right outside the window. We just keep our heads down and work.
