Junction Palace Restaurant

Down in Jaisalmer, specifically in the Achal Vanshi Colony, you’ll find our place, Junction Palace Restaurant. We are located near Dadencer Lake, which is a nice landmark even if the water level changes with the seasons. The air here is often dry and full of sand, so we are constantly dusting the tables and chairs. It is a simple setup we have going. The kitchen is tucked in the back and that is where most of the work happens throughout the day. We get a mix of people coming in—some live just down the street and others are just passing through town. We try to keep the atmosphere quiet, though the sounds of the colony always find their way inside. It’s a local spot where we don’t worry about being trendy. We just worry about the food being cooked right and the floor being clean. The building itself has been around for a bit and it has its quirks, like a door that sticks or a window that rattles when the wind picks up. We start early to prep everything for the day. There isn’t a huge staff here, just a couple of us handling the orders and the cleaning. We don't use a lot of fancy words to describe what we do. We just open up, cook, and close at night. It’s a straightforward way to earn a living.
