Desert Restaurant

Our place, Desert Restaurant, is actually out at the Royal Desert Safari Resort and Camp. We are located in Sankariya, which is near Pokran. It is a bit of a drive from Jaisalmer city, but that is the point. Out here, there is a lot of sand and a lot of sky. We set up this restaurant to serve the people staying in the camp or just passing through the desert. It is very different from a city restaurant. There is no traffic noise here, just the wind and the animals. We keep things very basic. The kitchen is small but it does the job. We cook over fires sometimes when the gas is low. It gives the food a certain taste that you don't get in a city kitchen. People come here to see the stars and ride camels, so we just provide the food to go along with that. It is a lot of work running a place in the middle of nowhere. We have to bring everything in from the town on a truck. But we like the peace and quiet of the desert. The resort is our home most of the year. We don't have a big staff, just a few of us who know the desert well. If you are looking for a fancy dinner with waiters in suits, this isn't it. It's just good food under a big tent or the sky.
