Free Tibet Restaurant

Free Tibet Restaurant is actually located right on the Fort in Jaisalmer, in the Kotri Pada area. It’s a unique place to work because you’re surrounded by all that old yellow stone and history every single day. The streets up here are narrow and winding, so you can’t bring cars up; people just walk or use scooters. We have been here for a while, serving the travelers who come to see the fort and the locals who live inside its walls. The view from this part of the fort is something else, especially when the sun is setting over the city. Our kitchen is small and we don't have all the modern gadgets you might find in a big city restaurant, but we make it work with what we have. It gets incredibly hot in Jaisalmer, so during the middle of the day, things slow down a lot. We usually take that time to rest or prep for the dinner service. When the weather is nice, people like to sit and just watch the activity in the alleys below. The building itself is very old, so we have to be careful with how we maintain it. It’s a lot of climbing up and down the stone steps to get supplies delivered, which keeps us busy. We are just a small spot at 345001 trying to provide a place to sit.
