Making biryani is what we do every single day. We start with the big pots early in the morning. The smell fills up the street before we even open the doors. It is a small operation. We don't have a lot of space, so things can get a bit tight when the lunch crowd arrives. People stand around waiting for their parcels or sit at the few small tables we have. Perambur Barracks Road is always full of life, with shops and people everywhere. We fit right in. Our staff knows the routine by heart. We scoop the rice, pack the meat, and hand it over. There is no fancy plating here. It is just food in a box or on a plate. We use what we have and try to make enough for everyone who comes by. Sometimes we run out before the day is over. That is just how it goes. The floor gets a bit messy during the rush, but we clean it up once things quiet down. It’s just a local biryani shop doing its thing in Doveton. We don't have air conditioning, so the ceiling fans are always spinning as fast as they can go. It's a busy, noisy, and hot little corner of the city.
