We opened up Sindhi Rasoi on Mahmoorganj Road a while back. It’s right there in Riddhivihar, just across from the Anokha family parlour. If you know that area in Varanasi, you probably know the traffic can get a bit loud during the day, but it’s a good spot to be. We spend most of our mornings getting the kitchen ready and making sure everything is wiped down before people start coming in. It’s not a very big place, just enough tables for families to sit and have a meal together. Sometimes the fans are a bit noisy, but they keep the air moving when it gets humid outside. We try to keep things simple here. My cousin usually handles the counter while I check on what’s happening in the back. The menu is what it is, mostly stuff we grew up eating ourselves. We don't have any fancy decorations or soft lighting, just plain walls and some good lights so you can see your food clearly. Sometimes people stop by just to ask for directions because of the parlour across the street, and that’s fine. We’ve lived in this part of town for years, so we know most of the faces that walk past our door. It’s just a regular daily routine for us, nothing more than that. We open up early, get the stoves going, and stay until the last plate is washed at night. It’s hard work but it’s ours.
