Ansh Chanish King Restaurant

Our restaurant is right in Baragaon, Varanasi. We are situated right across from the State Bank branch. It’s a good spot for us because everyone in the village eventually comes to the bank for something. We call it Ansh Chanish King. We do a mix of things, but people really like the Indian-style Chinese food we make here. Varanasi is a very busy place and Baragaon has its own crowd of people. We have a small seating area inside the shop. It’s not very big, so it can get a bit cramped during the lunch hour. We have some posters on the walls to make it look okay. Most of the cooking happens on big high-pressure burners with lots of fire. You can see the steam and smoke coming out of the kitchen. We aren't a high-end place or anything. It’s just a local food joint. I manage the counter and my brother spends most of his time in the kitchen. We use a lot of noodles and different sauces. People seem to like the spicy touch we give to everything we cook. We don't have a delivery bike of our own. People usually just come here and pick up their food packets to take home. We use simple plastic containers and old newspapers to wrap things up. It’s a basic setup. We don't have a fancy uniform for the staff. We just wear our regular clothes. Sometimes the bank staff comes over.
