Pradhan Dhabha

You will find us on Kachhwa Road in Varanasi, not too far from the Sabzi Mandi. Being near the vegetable market means that everything starts very early for us, usually while it is still dark outside. The road is often dusty and filled with trucks and tractors moving goods back and forth. We are a dhabha, so we don't have any fancy booths or air conditioning, just basic benches and tables for people to sit at. Most of our customers are folks traveling through or workers from the mandi who need a quick, hot meal before they get back to work. The tea is always hot, and the kitchen is always going with something on the stove. We have been here for years, and the building is just a simple brick structure that handles the heat and the rain. There is always a layer of dust on the outside from the traffic on Kachhwa Road, but that is just part of living in this area. We don't have a big staff, just a few of us who handle the cooking and the serving. It is a noisy place with the sound of horns and people shouting in the market nearby, but it feels right to us. We just focus on keeping the pots full and the customers fed so they can get back on the road to wherever they are going.
