Jashan

Jashan is located right at the Amar Bay Pass Choraha in Chitaipur, Varanasi. Being near the bypass means there is always a lot of noise and dust from the trucks passing by, but we’ve gotten used to it over the years. This place is pretty simple. We have some seating and a kitchen that stays busy from lunch until late at night. Most of our workers live nearby in the 221001 area, so they just walk or bike here. We don't have a website or anything like that, just a sign outside that people see when they drive past the intersection. It’s a lot of work keeping the floors clean with all the foot traffic we get. I spend most of my day sitting near the entrance, making sure everything is running okay and the supplies are coming in on time. We buy our vegetables from the local market every morning. Sometimes the price of tomatoes goes up and we have to complain to the vendor, but that’s just how business goes. The atmosphere is just casual. People come in, eat, talk for a bit, and head back out to the bypass. We don't try to be anything we aren't. It’s just a spot for people to gather in Chitaipur. We’ve been here for a while now and the regulars know our names. It’s a decent living, even if it gets loud sometimes. We just keep serving food.
