Finding us at Dolphin Restaurant can be a little tricky if you are new to Varanasi. We are tucked away at D 16/28-A, near the Rashmi Guest House in the Dasasumedh area. Being so close to Manmandir Ghat means there is always a crowd of people walking by. The air is thick with the smell of the river and the food we are cooking up in the kitchen. It’s a small place, nothing too grand. We have some tables and chairs, and the menu is stuff we know how to make well. Most of our customers are either pilgrims coming from the ghats or travelers staying in the guest houses nearby. The walls could probably use a fresh coat of paint, but we are usually too busy serving tea and meals to worry about that right now. It gets really hot in the summer, so the fans are always going full blast. We’ve been here in 221001 for a while now, and the rhythm of the city just becomes part of the day. You hear the bells from the temples and the sound of people talking in the lanes. It’s a bit chaotic, but that’s just how this part of town is. We just try to get the orders out on time and make sure nobody leaves hungry. It’s simple, honest work for us, and we like the bustle.
