Our restaurant is tucked inside the Meraden Grand Hotel over in the Cantonment area. We’re at Patel Nagar, Varanasi 221002. It’s a busy part of town with a lot of movement. We’ve been cooking here for a good while. It’s not a massive place, but we have enough tables for the folks staying at the hotel and people walking in from the street. We just focus on the food and making sure the kitchen is running like it should every single day. We spend a lot of time chopping vegetables, preparing spices, and checking the ovens. It’s a lot of work but it’s what we do for a living. We don't have a fancy philosophy about it. People get hungry, they come in, and we feed them. We try to keep the place looking decent and the floor swept after every meal. Sometimes it gets a bit hectic during the dinner rush, but we manage to get the plates out. Varanasi is a place with a lot of history, and being in the Cantonment means we get a mix of locals and visitors from all over. We just treat everyone the same and hope they enjoy what we’ve made. We aren't trying to win any prizes, we just want to serve a good meal and keep our customers coming back. That’s about all there is to it. We stay busy and keep the pots moving in the back. It’s a loud, hot kitchen but it’s our kitchen.
