Fort Kitchen Restaurant and Caterers

We are located right at Vallathol Junction in Thrikkakara, specifically on the Seaport Airport Road. Most locals know us because we are near the Suburban Club Thrikkakara. Fort Kitchen Restaurant and Caterers is what we call the place, and we do both walk-in meals and catering for events. The Ernakulam traffic can be a real headache, especially during the rush hours on this main road. Our kitchen gets started very early because the catering orders have to be packed and sent out before the roads get blocked up. The 682021 area is always moving. We have a small team here, some of us handle the cooking while others manage the deliveries. It gets sweaty and loud in the back when the burners are all going at once. We don't use any fancy systems, just notebooks and some good memories for the orders. Sometimes we run out of a certain dish by lunchtime, and that’s just how it is. We try to keep the floors clean and the tables wiped down, but with so many people coming from the junction, it’s a constant job. It’s a simple setup we have here. We’ve been part of this neighborhood for a while, seeing the buildings go up around us. We just keep cooking and serving whoever stops by. It’s just us working hard every day to get the food out on time.
