Sindhoor Palace Restaurant

You can find us in Kowdiar, inside the Salvation Army Redshield Guest House compound. It’s a bit of a different setup since we are tucked away inside the compound rather than being right on the sidewalk. This actually makes it a bit quieter than the main road, which is nice when you're trying to eat. We’ve got our tables set up and the kitchen stays pretty busy from lunchtime until late evening. The staff here is small, just a few of us who have been working together for a while. We know the regulars by name and usually know what they’re going to order before they even sit down. The walls are a simple color and we don’t have any of those fancy modern ornaments you see in the city center. It’s just a place to get a meal. Sometimes the guest house residents come over to eat, and other times it’s just people from the neighborhood. We spend our afternoons prepping vegetables and making sure the spice jars are full. There is always something to do, whether it’s fixing a wobbly table leg or checking the inventory in the store room. We don’t really think of ourselves as a big fancy palace, despite the name. It’s just a local restaurant where we try to do things the right way every day without making a big fuss about it. We’ve been here for years and hope to stay for many more.
