Arabian Broast Restaurant

Our place is on the Bypass NH Road in Poonthura. It’s easy to find because we are near the SBT Bank. Being on the bypass means we get a lot of people traveling through Thiruvananthapuram who just want to stop for a quick bite before getting back on the road. The sun gets really strong out here, so the shade inside the restaurant is always welcome. We spend our mornings breading the chicken and getting the fryers ready. It’s a messy job, but someone has to do it. The kitchen stays hot all day long. We have a small group of guys working here, and we mostly just joke around while we work to keep the day moving. The furniture is just plastic and metal, nothing fancy, because it’s easier to clean that way. We don't have a big marketing plan. We just put the sign out and hope people see it from the road. Sometimes the traffic is so bad that people pull in just to escape the congestion for a few minutes. We’ve got our routine down pretty well after all this time. We check the stock, clean the windows, and make sure the oil is fresh. It’s a lot of repeat work every day, but it’s what we know how to do. We just stay busy and keep the place running as best as we can until the night ends.
