Red Chillies

You can find us at Red Chillies in Kowdiar, which is a pretty well-known part of Thiruvananthapuram. We’re right opposite Fashion Street, so there’s always something to look at out the window. It’s a nice area with a lot of people walking around, especially in the cooler parts of the day. We started this place because we liked the vibe of Kowdiar and wanted to be part of it. The restaurant is fairly simple inside. We didn't spend a fortune on interior designers; we just put in some sturdy furniture and got the kitchen going. It’s mostly about the food for us anyway. We spend a lot of time sourcing ingredients from the local markets nearby. The traffic on the road can be a bit much during peak hours, but that’s just city life. We have a mix of regular customers who live in the neighborhood and people who are just visiting the shops on Fashion Street. It’s a decent mix of people. We don't really have a big marketing plan or anything like that. We just open the doors every morning, sweep the floors, and start cooking. Some days are busier than others, but we just take it as it comes. It’s a small team here and we all do a bit of everything, from taking orders to cleaning up at the end of the night. It is hard work but we are used to it.
