Carte Blanche Restaurant is located at number 17 Romain Rolland Street in Pondicherry. If you know where Hotel De L Orient is, then you know where we are because we are right inside it. The 605001 area is the older part of town with all the French-style buildings and quiet streets. Romain Rolland Street is quite pretty, with trees and old walls everywhere. We have been part of the hotel for a long time. The building itself is very old and has a lot of history in its bricks, but we don't make a big deal out of it. We just work here. The kitchen is where most of us spend our time, getting things ready for the day. We get a lot of people who are staying in the hotel, but also people who are just walking around the neighborhood. It’s a calm place to work compared to the busier parts of Pondicherry. We don't use any fancy marketing talk. We just serve the food and keep the tables clean. Sometimes the fans hum a bit too loud or a chair needs fixing, and we just take care of it ourselves. It’s a small team here and we’ve all been together for a while. Being inside Hotel De L Orient gives us a nice atmosphere to work in. We just focus on the daily chores and making sure everyone is fed and the place looks alright for the next person coming in.
