Tyagi vaishno dhaba

This dhaba is out on Sanoli Road in Panipat, specifically in the Chajpur Kala area. It’s a typical roadside spot where drivers and locals come to eat. We serve vegetarian food because that’s what a Vaishno dhaba does. The road is usually full of trucks and cars going back and forth, so we see a lot of travelers. It’s a simple building, nothing fancy at all. We have wooden tables and benches for people to sit. The kitchen is always busy, especially during lunch and dinner hours. We started this place because we saw a need for a good meal on this stretch of the road. Panipat is known for its textile work and history, but out here on Sanoli Road, it’s mostly about the traffic and the fields. We cook every day and try to keep everything clean, though it’s hard with all the dust from the road. The water here is good, and we use it for all our cooking. We get our vegetables from the local mandi every morning. It’s a lot of lifting and carrying before the sun even comes up. The stove is almost never cold. We don't have air conditioning, just the breeze coming in from the open front. If it’s raining, the sound on the roof is so loud you can’t hear yourself talk. But people still come in to get out of the wet. We don’t have a fancy name, just the family name on the board outside. It’s a hard but simple life for us to keep things running.
