Goswami shudh veshno dhaba

This is a shudh veshno dhaba located near Bhagat Singh Market in the Kacha Camp area of Panipat. We are a vegetarian place, and that is what we have always been. The kitchen is the heart of the shop. We start our work early in the morning by lighting the fire and cutting up sacks of vegetables. It gets very hot in there, especially when the tandoor is going full blast. We don't have a printed menu with fancy pictures. Usually, we just have a few things made fresh each day, like dal and seasonal vegetables. People from the market and the surrounding shops come here for their lunch. The seating is very basic with simple tables and benches. It gets quite crowded around midday, and you might have to wait for a seat or share a table with someone you don't know. We don't spend any money on decorations or music. The walls are just painted a plain color. We focus all our energy on making sure the food is hot and tastes like it should. My brother sits at the counter and I stay in the kitchen most of the time. It is a loud and busy place with the sound of the street coming through the door. We don't have a big marketing plan. We just cook and serve people who are hungry. If you want a fancy meal, this is not the place, but the food is solid.
