Balle Balle Punjabi Dhaba

Our dhaba is right on the G.T. Road in Samalkha, Panipat. You can’t miss it if you are driving towards Delhi or heading the other way. The address is 132101, and we’ve been here for a long time. The place is called Balle Balle Punjabi Dhaba. It’s a basic setup with some outdoor seating and a covered area for when it rains. The road is always full of trucks and the noise of horns is something you just live with. We use big tandoors for our cooking. My uncle and I run the place with a couple of helpers. We wake up early to get the coal started. It’s a lot of physical work and the heat can be tough in the summer. We don't have air conditioning, just some big fans that move the air around. The benches are made of wood and we scrub them down every morning. Travelers stop here for a break. We don't have a big fancy menu with pictures. We just tell you what's ready. The washrooms are out back and we try to keep them as clean as possible for the customers. Sometimes the electricity cuts out and we have to use lanterns. It adds to the feel of the place, I guess. We are just a simple roadside stop for hungry people. We don't do any advertising. People just see the sign and pull over. We serve the same food every day and hope people like it enough to stop again.
