Panipat is a place that never stops, especially along the GT Road. Our place, sanjay ketters, is in the Cover Complex. It’s near Green Park and Skylark Road. If you know the 132103 area, you know how busy these streets get. We do a lot of heavy lifting here. Catering is mostly about moving big pots and crates of supplies. The Skylark Road area is always jammed with traffic. We have to plan our timings carefully or we get stuck for hours and things get late. The complex is a bit old now. The stairs are narrow and the parking is always a struggle. But we make it work. I spend most of my day on the phone or checking the kitchen lists. It’s not a glamorous job. There is a lot of grease and steam. My clothes usually smell like spices by lunchtime. We don't have a marketing department. Word of mouth is how people hear about sanjay ketters. Someone sees us at an event and then they call. That’s it. We don't spend money on fancy decorations for our own office. We’d rather spend it on better stoves or a reliable van. The GT Road noise is something you just get used to after a while. You stop hearing the trucks. We just keep our heads down and get the orders ready for whenever they need to go out to the customers.
