Kaushik Wishnu Dhaba

Kaushik Wishnu Dhaba sits right on Gohana Road in Panipat. Our location is near the Rajasthan Transport Co, so we see a lot of trucks and heavy vehicles passing by all day and night. Being a dhaba in the 132103 area means we are used to a certain kind of pace. It is usually quite dusty outside because of all the traffic on Gohana Road, but that is just the way it is in this part of town. We mostly serve the drivers and the workers who are on the move. The kitchen stays busy with big pots and the sound of the stove. We don't have any fancy waiters or a polished dining room. It is more about getting a hot meal to someone who has been on the road for hours. We are just a small team here, and we do everything from the cooking to the cleaning ourselves. There isn't any corporate structure behind us. We just open up in the morning and stay busy until late. Sometimes the weather in Panipat gets really harsh, either too hot or quite cold, but the work in the dhaba doesn't stop. We spend a lot of time just chatting with the drivers and hearing about where they are coming from or where they are going. It is a simple life here at the dhaba, just focusing on the basic stuff and making sure there is enough food for the next group that pulls in from the road.
