Our kitchen is tucked away in the Munirka neighborhood of New Delhi. If you know Munirka, you know the lanes are narrow and it's always crowded with students and people rushing to the metro. We’ve been in this spot for a bit now, and it’s a busy place to be every single day. We start early in the morning, getting the stoves going and prepping everything for the day ahead. The air in the kitchen gets pretty thick with the smell of spices and steam once we start cooking. It is not a quiet job. There is always the sound of knives on boards or the clanging of big metal pots. We are a small team and we all know each other's habits by now. Sometimes we argue about how much salt to put in or who forgot to turn off the lights, but it’s all part of the daily routine. We don't have a big storefront with neon signs or anything fancy. It’s mostly about getting the food ready and out the door for people. We see a lot of delivery drivers waiting around outside, checking their watches and talking. The humidity in Delhi can be tough, especially in a small kitchen, but we just keep the fans going and get on with it. It’s honest work. We aren't doing anything revolutionary, just making meals for people who are hungry and tired after a long day in the city.
