We are based out of the Madurai H O area. If you’ve spent any time around here, you know how busy the streets can get. Our setup is pretty straightforward and we don't have a lot of bells and whistles. We spend most of our time in the kitchen area preparing meals for different events that come up in the city. It’s not a glamorous job, but it’s what we do every day. We don't have a lot of fancy equipment, just the regular stuff that works and gets the job done. Usually, it's a lot of chopping vegetables, stirring big pots, and packing things up into containers. We handle a lot of local requests from families who don't want to cook for a crowd themselves. It gets pretty loud and hectic when we have a big order to get out by noon. We’ve learned to work around each other in the small space we have. There isn't much of a front office, so most people just find us through word of mouth or by seeing our containers being moved around on the scooters. We keep our heads down and focus on the food we are making. Madurai is a place where people really care about what they eat, so we try to be careful with how we prepare things in our kitchen. It’s just honest work for us. We aren't trying to be the biggest name out there, just trying to keep the kitchen running and the people who eat our food satisfied and full.
