We have been operating out of Building No.-73 on Burtolla Street for a long time now. This part of Bara Bazar is always crowded, and you can hardly move some days because of all the handcarts and people rushing around. Choudhary Spices is just a small place among many others here, but we keep busy with our daily routines. The air around our building usually smells like a mix of different seeds and ground-up roots, which is just how things are in this neighborhood. We don’t have a fancy office or any of those modern glass windows you see in the newer parts of town. Instead, we have heavy wooden doors and floors that have seen better days. Every morning, we open up early to beat the worst of the heat, though in Bara Bazar, it stays hot pretty much all day. It’s a lot of manual work, moving things from one corner to another and making sure everything is where it should be. Sometimes the neighbors complain about the dust when we are working, but that is part of the spice trade. We just get on with it. Most of the folks working here have been with us for years, so we all know what needs doing without having to talk about it too much. It’s not a glamorous life, but it’s what we know. Burtolla Street has its own rhythm, and we are just a tiny part of that noise and history that keeps the local kitchens running.
