Our place is at Lotus Flat 173, on the 3rd Cross of Sankgar Nagar in Pammal. It’s a bit different working out of a flat, but we’ve made it work for us over the years. We’ve turned the space into a proper kitchen that can handle a lot of cooking. It might look small from the outside, but we manage to produce a lot of food for the people in Pammal and the surrounding areas. We start early, usually while the neighborhood is still quiet, to get a head start on the prep work. There is always rice to be washed and vegetables to be cleaned. We don’t have a big staff, so everyone does a bit of everything. One minute you might be stirring a pot and the next you’re packing up boxes for a lunch delivery. We like the personal feel of being a small operation. It means we can keep an eye on everything that goes out. We don’t use any processed stuff if we can help it, preferring to make our own masalas. Sankgar Nagar is a friendly place and we often have neighbors sticking their heads in to see what smells so good. It’s a hard way to make a living, with the heat and the heavy lifting, but we’re proud of what we do. We just want to provide a good meal for people’s special days without any unnecessary fuss or complication.
