Running a kitchen in Guwahati means you get used to the humidity pretty fast. We are located in the Chowdhury Complex right on S J O Road. If you are coming from the Athgaon Flyover, we are very close by, so we get a lot of people who are just passing through that part of town. The noise from the flyover is something you just stop hearing after a few weeks of working here. Inside, it is mostly about the smell of the stove and the sound of plates being stacked. We keep it simple. There are tables and chairs and not much else to look at. People come in because they are hungry and want to sit down for a bit. We spend a lot of time cleaning the floors and making sure the kitchen stays organized. Athgaon is a crowded place so it gets tight sometimes when the lunch rush starts. We don't have a big menu with a hundred things on it. Just what we can make well and serve quickly. My brother and I usually handle the morning prep ourselves. We get the vegetables from the local market early so everything is ready before the doors open. It is a lot of work and our feet usually ache by the end of the shift. But that is just how it is when you run a restaurant in this part of Guwahati. We just keep the lights on and the food ready.
