Masala (Holiday Inn Hotel)

This is Masala, and we are part of the Holiday Inn Hotel in Ernakulam. You will find us at the Chakkaraparambu Junction, right on the NH Bye Pass in Vennala. It is a very busy corner of the city. We have travelers coming in at all hours of the day because of the highway being so close. The hotel itself is quite big, but we try to keep things simple in the kitchen. We serve people who are staying here for work or holidays and also locals from Vennala who just want a place to eat. It gets pretty noisy outside with all the traffic on the bypass, but inside it is a bit different. We spend most of our time getting ready for the next meal service. We have a daily routine that we follow. It is not about being the most glamorous place, even if we are located inside a hotel. We just want to make sure the food is ready and the tables are set for whoever comes in. The staff here has been around for a bit, so we know how things work. Sometimes it is very quiet and other times we are rushing around trying to keep up. That is just how it goes in a place like this. Being near the bypass means we see a lot of different people. We do not use fancy words to describe what we do. We just work here and make sure the guests have what they need when they sit down.
