WAZWAN RESTAURANTS

WAZWAN RESTAURANTS is over at 43 Gandhi Road in Dehradun. We are pretty close to Tehsil Chowk, which means there is always a lot of foot traffic. I’ve been working in the kitchen here for a while, and it’s a lot of hard work. We focus on the food more than anything else. The mornings are spent prepping all the meat and vegetables. Dehradun can get quite cold in the winter, and the steam from the pots feels good then, but in the summer, it’s a different story. The restaurant isn't very big, so it fills up fast during the lunch hour. You’ll see a lot of people who work in the government offices nearby coming in for a quick meal. I usually have to shout over the noise of the exhaust fan to talk to the other cooks. We don't use any pre-made stuff, so everything takes time to get right. Sometimes we run out of certain dishes early if the crowd is bigger than we expected. It’s a simple place with regular tables and chairs. We don't spend much time on decorations. Most people just come here because they know what they’re getting. Gandhi Road is always loud with vehicles, but once you’re inside, the smell of the spices kind of takes over. We have a small tea station in the corner where we take breaks. It’s just a busy local eatery doing its best to feed the neighborhood every day. Sometimes the rains make the street messy, but people still come in.
