One of the easiest ways to spot us is that we are right opposite the police station. It makes the neighborhood feel a bit more settled, having them right there. The canal road has its own rhythm, with cars and rickshaws constantly passing by. We start our day early, usually before the traffic really picks up. There is a lot of cleaning to do and we have to get the kitchen fires started early so they are ready when they need to be. Dehradun has some nice weather, but the humidity can make the kitchen feel pretty stuffy sometimes. We just open the doors and keep moving. Our spot isn't anything overly polished; it’s just a place on the corner where we do our work. We spend a lot of time just talking to the vendors and making sure we have fresh stuff coming in. It’s a straightforward job, and we don’t try to make it sound like more than it is. We are just here at Survey Chowk every day, making sure the tables are set and the food is coming out like it should. It’s a good spot to be in Dehradun, and we're just part of the local scenery like everything else on this busy road.
