SAT DA Dhaba

This dhaba is right on the main road in Amritsar, specifically in the Kot Khalsa area. We are directly across from Khalsa College, so we get a lot of students coming through throughout the afternoon. The road outside stays pretty noisy with the traffic and the horns blowing. We open up every morning and start by cleaning the big stoves and getting the water ready. It's a simple space with basic seating. We don't have fancy air conditioning or anything, just some sturdy fans on the ceiling. The walls have been the same color for years. People come in, sit down, eat their meal, and then head back out to their classes or work. It gets a bit crowded during the lunch hour when everyone seems to arrive at once. The kitchen is always a bit hot because of the constant cooking. We spend a lot of time chopping vegetables and stacking plates in the back. There’s always someone at the counter handling the cash and making sure things are moving along. It’s not the quietest place to sit, but it’s familiar to everyone around here. We know the shopkeepers nearby and the guys who drive the rickshaws. The floor is concrete and easy to mop up at the end of the night. It’s just a regular part of the street where people come to fill their stomachs before getting back to whatever they were doing.
