Amritsari Punjabi Dhaba

So, this is Amritsari Punjabi Dhaba. We are located over in Indra Colony, right in the Cot Khalsa area of Amritsar. It’s a simple setup we have here. My family and I handle most of the daily chores. The place isn't very large, so it can get a bit cramped when the dinner rush starts. We’ve got a few tables and chairs that have seen better days, but they do the job. We make a lot of traditional Punjabi plates. There isn't a secret recipe or anything, just the way we learned to cook at home. We start early in the morning to get the lentils soaking and the dough prepped. Sometimes we run out of certain items by the end of the night, but that’s just how it is when you cook everything fresh. The neighborhood in Cot Khalsa is pretty quiet mostly, but our corner stays active. We don't spend money on fancy menus or decorations. We'd rather just keep the prices fair for the local workers and families who stop by. If the fans are a bit noisy, well, they keep the air moving at least. It’s a lot of work running a dhaba in Amritsar because people know what good food should taste like. We just try our best to keep everyone fed and get home at a decent hour. It's not a big corporate thing, just us in the kitchen trying to make a living.
