Saroj Vaishno Dhaba

Batala Road in Amritsar is always a tight squeeze, especially the area around Jaslon Market. We are located in Gali No 4, which is part of the Vijay Nagar neighborhood. Our place is a Vaishno dhaba, so we do not serve any meat at all. Everything we make is strictly vegetarian. The space inside is quite small and it can get very hot because of the big tandoor oven where we bake the rotis all day long. You can actually see the white flour dust hanging in the air sometimes when we are really busy with orders. We do not have fancy printed menus or waiters wearing matching uniforms. Usually, it is just one or two of us taking the orders and bringing out the hot dal and sabzi to the tables. People sit on narrow wooden benches and they usually eat quickly so the next person waiting can have a seat. That is just how things work in a busy market lane like ours. We get all our spices from the local shops nearby and we still grind some of them by hand. The walls could probably use a fresh coat of paint, but we are much more focused on getting the food right. We just serve the local people who live and work right here on Batala Road. We open up early and stay until the food is finished. (255 words)
