Rajesh Bhathura Bhandar

Rajesh Bhathura Bhandar is located over on Shivala Road in the Shivala Colony area of Amritsar. We are pretty close to the Bhaiyan Shivala, which is a well-known spot around here. In this part of town, people really know their food, so we have to stay on our toes. Every day starts with making the dough for the bhathuras and getting the chole simmering in the big metal pots. The smell of the spices fills up the shop pretty early on. It is a small place, shop numbers 103 and 104, so things can get a bit cramped when everyone wants their breakfast at the same time. You can see the steam coming off the pans and hear the oil sizzling all morning long. We have been in this neighborhood for a long time, and we know most of the people who walk through the door by name. It’s not just about the food, it’s about the routine of the morning and seeing the same faces. The street outside is usually busy with rickshaws and people heading to work, and many of them stop for a quick plate before starting their day. We don't have a big team, just a few of us working together to get the orders out. We don't use any fancy machines, just our hands and the old stoves we have been using for years. It is hard work, but it's what we do.
