NEW MADRAS CAFE

This is NEW MADRAS CAFE on Lawrence Road. We are situated right across from the Pizza Hut, which makes us pretty easy to find if you're wandering around Amritsar. People often ask why we are doing Madras style food up here in Punjab, but there’s always someone looking for a change from the usual heavy meals. The cafe is a small place, nothing too big or loud. I usually start my morning early getting the dough ready and checking if everything is in order before the first customer walks in. Lawrence Road is always moving, lots of traffic and people shopping, so we get a good mix of folks. Some are regulars who work in the nearby shops and others are just passing through. It gets a bit hectic during lunch, and sometimes I forget to wipe a table right away, but we get to it eventually. It’s just me and a couple of others keeping the place running. We don't have fancy uniforms or a big marketing plan, we just open the doors and start cooking. The air in the kitchen gets thick with steam, but you get used to it. If you want a seat, you just find one that’s empty. We’ve been here at this spot for quite some time now. It’s a simple setup for people who just want a quick, decent meal while they’re out on Lawrence Road. It works for us and the customers who stop by.
