Amritsar is a city that loves its food, and kulchas are what we know. We start our work very early in the morning when it is still dark. The tandoor takes time to get hot enough. We don't have a large shop. It is a small corner spot where we stand all day. There is no air conditioning or fancy chairs. Most people just stand on the pavement and eat their plates. The flour and the stuffing take a lot of work to get right. My fingers are often dusted with white flour. We don't follow any strict recipes from books, we just do it by feel like we were taught by the ones before us. It gets very crowded around lunch time.
