LOVELY Amritsari Kulcha & Veg Champ

Our shop is at number 25 on 100 Feet Road, right by the Amritsar Bus Stand. It is a very busy area because of all the people coming and going from the buses. Opposite us is the Hanuman Mandir, so on certain days, the street gets even more crowded with devotees. We focus a lot on the kulchas and the veg champ because that is what people around here want. The tandoor stays hot all day long, which makes the shop quite warm, especially in the Amritsar summer. We don't have a lot of space, just enough for some tables where people can eat quickly and move on. The noise from the bus stand is constant—horns, people shouting, and the sound of engines. You get used to it after a while. Most of our customers are in a hurry to catch a ride or have just arrived and are hungry. We start the dough early in the morning so the first batch of kulchas is ready as the sun comes up. It’s a small team of us working here. We don't bother with fancy uniforms or slick marketing. We just put on our aprons and get to work. The floor needs cleaning every hour because of the foot traffic from the dusty road outside. It is a simple life, but it keeps us busy from morning until night. We just hope the dough rises right and the oven stays at the proper temperature.
