Dosa place

Amritsar is where we are. Dosa place is the name we went with. We are inside the Alpha mall on the 3rd floor. 143001 is the zip. It’s a busy mall most of the time. People walk around a lot looking at things. We are just one of the food spots on that level. We don't have a big fancy entrance. Just a counter and some seats for people. The kitchen is right there behind us. You can hear the scrapers on the tawa all day long. We make a lot of batter every single evening. If we don't make enough, we have to close early. That has happened once or twice when we misjudged. It’s hard to predict how many people will come in. Sometimes it's empty and we just sit there. Other times it's so crowded we can't even breathe. We get all kinds of people here. Some are tourists visiting the city and some live right down the street. We don't do any big advertising. People just see the sign while they are walking to the cinema. We try to keep the sambar consistent but sometimes the tomatoes are sourer than usual. We just adjust things as we go. It’s a simple way to make a living. The mall stays open late so we are often here until ten or eleven at night. Then we have to clean everything for the next morning. It’s a long day.
