The Cedar Restaurant

The Cedar Restaurant sits right in the Cedar Grand Hotel up here on Cart Road in Shimla. If you’re looking for us, we are pretty close to Winter Field. Most days it’s quite cold outside, so we spend a lot of time making sure the heaters are working and the windows are closed tight against the wind. It’s a busy spot because of where we are. People are always walking up and down the road. Some are tourists looking for a place to sit for a bit, while others are just passing through on their way somewhere else. We’ve been here a while now. The tables are solid wood and they’ve seen a lot of plates come and go. In the mornings, the light comes in through the glass and you can see the dust motes dancing around. We try to keep things tidy, but with so many people coming in with muddy shoes from the mountain paths, it’s a constant job. The kitchen starts early, usually before the sun is even fully up over the hills. You can hear the pots clanging and the staff talking while they prep things. It’s not a fancy life, just regular work. We see the same faces sometimes, folks who live nearby or work at the other shops on the road. It gets quiet late at night when the fog rolls in. Then we just lock up and head home ourselves for the night.
