Being located at shop number 8 on Mall Road in Shimla puts us right where all the action is, specifically in the Middle Bazaar area. If you’ve ever walked the Mall Road, you know it’s a lot of climbing and walking, and our little shop is right in the middle of that flow. The air up here in Shimla is usually crisp, but inside the shop, it’s always warm because of the equipment. We start our mornings by hauling supplies in, which can be a bit of a workout given the layout of the bazaar and the steep streets. We don’t have a big corporate setup or anything like that; it’s just a small space where we get the work done. The Middle Bazaar has a lot of history and the buildings are packed close together. We spend our days mostly behind the counter or in the back room. It’s a bit cramped sometimes, especially when we have a lot of orders coming in at once, but we make it work. The tourists are always passing by, looking for a quick bite while they explore the hills. We see the same faces from the other shops every day too. It’s a steady life, just keeping the place running and making sure we don’t run out of ingredients before the day is over. It gets quiet in the late evenings when the fog rolls in, and that’s usually when we start cleaning up the counters and getting ready for the next day.
