The Kav

The Kav is located right on the Harmu Bypass Road in Ranchi, not far from the BJP office. It’s a busy stretch of road, so there is always a lot of dust and noise from the traffic passing by. We spend a good amount of time every morning just wiping down the front windows and the furniture to keep things looking decent. The space isn’t huge, but it’s enough for what we need. We don't have a big marketing budget or a team of people telling us how to run things. It’s mostly just a few of us making sure the supplies are ordered and the kitchen is ready to go. Sometimes the power goes out, which is common enough around here, and we just have to make do with what we have until it comes back on. We’ve been here for a bit now, and we know most of the people who work in the nearby offices. It’s a straightforward kind of life, coming in early and leaving once the cleaning is finished at night. We don't use any fancy techniques or special equipment, just the regular stuff you’d find in any working kitchen. The menu is written on a board, and we change it whenever we feel like doing something different. It’s a bit messy sometimes when things get busy, but we manage to get through it every single day without too much trouble.
