We’ve been running Hindustani Dhaba out here on Kanke Road for a good while now. It’s right near the Iicm Joda Pull, so you can’t really miss us if you’re driving through Kanke. We don't have fancy chairs or those big menus with things nobody can pronounce. It is just a simple place where the stove stays on most of the day. Mostly, it’s local people and students who stop by when they’re hungry for something real. The kitchen gets pretty hot in the afternoons, but that’s just how it is when you’re making dal and rotis for a crowd. We don't put on an act here. The walls might need a bit of paint, and the tables are just plain wood, but the food is what people come for. Sometimes it’s loud when the truck drivers pull over, but it makes the place feel alive. We started this because we knew the area needed a spot where you can eat without spending too much. My brother helps with the accounts and I mostly look after what’s happening in the back. It isn’t much to look at from the outside, just a regular dhaba on the side of the road in Ranchi. We just try to keep things moving and make sure nobody leaves with an empty stomach. It’s a lot of work, waking up early to get the supplies from the market, but we’re used to it by now.
