If you know Bandra West, you know how Hill Road gets. We’re at number 95. It’s a busy spot with people shopping and walking by all day long. Our place, Spice Tree, is right in the middle of all that noise. Inside, it’s mostly the smell of whatever we’re cooking that day. We don't have a huge menu, just some stuff we know how to make well. The kitchen is small, so we have to be very organized or everything falls apart. We spend a lot of time cleaning up because the street outside is so dusty. It’s a lot of work keeping a food place going in Bandra. Rent isn't cheap and there’s a lot of competition. We just focus on our own pots and pans. We have some regulars who come in every week, and then there are the tourists who look a bit lost. We try to help them out if we can. The evening rush is usually the hardest part of the day. Everyone wants their food at once. We just do our best to keep up. It’s not always perfect, and sometimes we run out of certain ingredients before the day is over. That’s just life in a restaurant. We’ve been here for a while and we plan on staying. It’s a good community on Hill Road. It’s loud and messy, but it’s home for us.
