Sri Ayyappan Dosai Kadai

Sri Ayyappan Dosai Kadai is right on Pandiya Vellarar Street here in Madurai. If you know this city, you know that people take their food very seriously, especially when it comes to dosas. We are just a small shop on a busy street. We don’t have much in the way of décor, just the essentials for cooking and a few places for people to stand or sit. The griddle is almost always hot because there is usually someone waiting. It gets pretty smoky and warm inside, especially in the evenings when the crowd picks up. We’ve been at this same spot for quite some time, and the neighbors all know us. We don't have a huge menu; we just stick to what we know how to make well. Most nights, it’s just a scramble to keep up with the orders. We don't use any pre-made mixes or anything like that. We grind our own batter every day. Sometimes the street gets so crowded that it’s hard for people to even get to our door, but they still manage to find us. We aren’t trying to be the most famous place in Madurai, just a reliable one where you know what you’re getting. It’s hard work standing by the heat all night, but it’s what we do. We just focus on the batter and the heat and try to get every dosa right for whoever walks in.
