Chennai Fried Chicken

Starting the day in Madurai usually means dealing with the heat right from the get-go. We are located on the ground floor over in Ellis Nagar, specifically around Ram Nagar in the S S Colony area. It’s a busy neighborhood with a lot of houses and small shops tucked away. We spend most of our time in the kitchen or behind the counter. The building we’re in is pretty standard for this part of the city. You can hear the motorbikes zipping past all day long. We don't really have a big team, just a few of us making sure the fryers are ready and the floor is swept. People from the colony walk by, and sometimes they stop to chat for a bit. It gets pretty loud in the evenings when everyone is heading home from work. We don't do anything too complicated here. It’s mostly just making sure the chicken is ready when someone asks for it. I’ve noticed that the light in Ellis Nagar looks different in the monsoon, everything gets a bit damp and the street gets muddy. We just keep working through it. It’s not a big corporate office or anything like that, just our little spot on the ground floor where we put in our hours every day. Most of the people who come in live just a few streets away, so it feels very local and familiar to us. We just keep the lights on and stay busy.
