Being located at Agrini Apartment in Madurai means we see a lot of the same people every single day. It feels more like a neighborhood kitchen than anything else. We get things moving very early in the morning because people around here like their breakfast early. There is a lot of steam in the kitchen and the sound of steel plates clanking together. We try to keep things clean and straightforward. It is a small team of us here. We don't really do anything flashy. Most of our day is spent prepping vegetables or making sure the batter is ready for the next round of customers. The heat in Madurai can be a lot, so we try to keep the space as comfortable as we can for anyone walking in from the street. You might hear us talking loudly to each other over the noise of the fans. It is just the way we work. We have been in this spot for a while and we know which tables the regulars like to sit at. Life moves at its own pace here. We focus on the daily tasks, like sweeping up after the lunch rush and getting things set for the evening. It is just a regular restaurant doing regular work for the people living in and around the apartment complex. We don't have fancy menus with pictures, just what we are making that day. Sometimes we run out of the popular things before noon, but that’s just how it goes when you’re small. We just hope people enjoy their meal.
