Down here in Madurai, you don't see too many places like ours, but we’ve been at it for a while now. Being in the 625001 area, we are right in the heart of things where the streets are narrow and always full of people. It is quite different from back home, but we have adjusted to the life here. Most of our day is spent in a small kitchen that gets quite warm, especially with the South Indian sun beating down on the roof. We don't have a big fancy storefront with neon lights; Punjabhi Restaurant is just a plain door and some signs to let people know we are open. A lot of students and office workers come in during their lunch breaks looking for something different from the usual local food. We try to keep things simple and just cook what we know how to make. The seating is a bit tight, and you might have to share a table if it gets crowded, but nobody seems to mind too much. Sometimes it's hard to find certain ingredients we need here in Madurai, so we have to make do with what the local markets have. It’s a small operation, just me and a couple of others handling the cooking and the cleaning. We don't do any big advertising or anything like that, we just rely on people walking by and smelling the food. It is a quiet life, mostly just working.
